  Camphor Tea Duck

  Recipe: 1 fat duck (about 1500g), 100g of camphor wood chips, 50g of tea leaves, 10g of Fritillaria cirrhosa.

  Method: Grind salt, Sichuan pepper, and Fritillaria into powder and apply it evenly to the inside and outside of the duck. Marinate for 2 hours. Place a large iron pot over high heat, lay scallions flat on the bottom, then mix and spread sawdust and tea leaves on top. Put the duck on a wooden rack above the mixture, about an inch away, cover with a lid, and smoke for 10 minutes. Flip the duck over and smoke again until it turns yellow. Remove and place in a steamer basket, add ginger slices, steam until 80% cooked, remove and drain excess water. Then put it in vegetable oil to deep-fry until golden brown, remove, cut into pieces, and serve on a plate sprinkled with Sichuan pepper powder and MSG.

  Function: Invigorating spleen and resolving phlegm, relieving chest tightness and regulating Qi.
